Overnight oats. The ultimate cheap and time saving breakfast! Oats are packed full of protein, fiber and minerals. They boost your energy levels and are seriously filling and super versatile. However, there are individuals that find oats hard to digest and this is why soaked/overnight oats are so great. As the oats are left to soak overnight their starches break down which reduces the amount of natural Phytic acid. Phytic acid is an antinutrient that interferes with digestive enzymes and inhibits mineral absorption, so because this acid is broken down overnight the oats are easier for your body to digest.

Ingredients you will need:
- 50g oats
- 90g pumpkin puree
- 100g cashew milk
- 2 tablespoons chia seeds
- 1 teaspoon cinnamon
- 1/2 teaspoon maca powder
- 1 teaspoon mixed spice
- a few flaked almonds for the topping
- Place all of the ingredients into a bowl or a jar and mix it all together! You can also add whatever other ingredients you wish to make it your own. (e.g. maple syrup, nuts, seeds, shredded apple….)
- Place it in the fridge overnight and enjoy for a yummy, warming breakfast.
